Breakfast (7 am)
Baked oatmeal with blueberries (recipe)
Veggie & Cheese Egg Bake (sorta like a crustless quiche)

Lunch/Snack (2:30 pm)
Hard cooked eggs
Celery with peanut butter 

Dinner (6 pm)
Transylvanian Stockpot (recipe)* - a fun name for a delicious cabbage/sausage soup
Apple slices

Calories: 1,165
Carbs: 64
Fat: 72
Protein: 71

The carb number is a bit high because of the oatmeal and the protein number is a little low because of the soup. And it was a lazy-stay-at-home day so I just had a light "lunch."  

*The recipe says it serves 4-6. I divided the recipe in half and had what I thought were 4 generous servings. Also, I used polska kielbasa instead of Italian sausage.
